Guji is a region located in southern Ethiopia and is known for its high-quality coffee. Coffee cultivation in Guji typically begins in October and lasts until January. Farmers plant coffee seeds in nurseries and then transplant them to the fields once they are about six months old.

The coffee trees in Guji are usually grown in shade, as the region experiences high temperatures and sunlight. The shade also helps to promote biodiversity and prevent soil erosion. Farmers use organic fertilizers and practice intercropping, which involves planting other crops such as beans or corn alongside coffee trees to improve soil health.

Once the coffee cherries have ripened, they are hand-picked and sorted. The ripe cherries are separated from the unripe ones, and any debris or defective cherries are removed. The coffee is then washed and dried on raised beds or patios.

After drying, the coffee beans are transported to processing mills where they undergo further sorting and grading. The beans are then packed and exported to international markets.

Mormora Farm's 200 hectares are mainly comprised of coffees grown under the shade of a forest canopy. Hand-picked coffee cherries are delivered to the processing station. After hand-sorting to remove any unripe, overripe, or damaged fruit, the coffee is laid to dry in direct sunlight on raised beds. Cherries are turned frequently to promote even drying over the course of three weeks.
