For years, decaf coffee has carried an unfair reputation. It has been the subject of jokes, bumper stickers, and the infamous “death before decaf” attitude that suggests drinking coffee without caffeine somehow means you’re settling for less.
But the coffee world is changing — and we think that’s something worth celebrating.
A recent article from Food & Wine, “Why Decaf Coffee Keeps Getting Better,” highlights how specialty coffee professionals are helping redefine what decaf can be. Once considered an afterthought, decaf is now being treated with the same care and attention as any other specialty coffee.

Decaf isn’t “less than” coffee
Part of decaf’s reputation came from the reality that many people’s experiences with it weren’t great. Stale, pre-ground coffee sitting in a restaurant urn was often the introduction many people had to decaf. Those cups didn’t exactly showcase what coffee could be.
But specialty coffee has changed the conversation.
Coffee professionals are sourcing high-quality coffees specifically for decaffeination, exploring better processing methods, and proving that removing caffeine doesn’t mean removing flavor.
In 2024, decaf even reached the highest levels of coffee competition when Weihong Zhang of Blendin Coffee Club won the U.S. Coffee Championships Brewers Cup using a decaffeinated coffee. That moment helped challenge the idea that decaf was somehow not “real coffee.”
As James Hoffmann of Square Mile Coffee Roasters shared in the Food & Wine article, “specialty coffee, in particular, has a role to play in making it a delicious option that doesn’t feel like a compromise.”
We couldn’t agree more.
How does Swiss Water Decaf work?
Modern decaffeination methods are a far cry from the early days of decaf. The Swiss Water Process is a natural, water-based method designed to remove caffeine while protecting the coffee’s original character and flavor.
The process uses a green coffee extract and carbon filtration to gently draw caffeine out of the beans — without relying on chemical solvents. The goal is simple: keep the delicious coffee experience, minus most of the caffeine.
That means the origin, roasting, and brewing still matter. A great decaf starts with great coffee.

Why choose decaf?
For many coffee drinkers, decaf isn’t about giving something up — it’s about enjoying coffee in a way that fits their life.
Some people choose decaf because they love the ritual of coffee but want less caffeine. Others enjoy a cup later in the day without worrying about it affecting their sleep. And some simply love coffee for what it is: the aroma, the flavor, the process, and the experience.
As the specialty coffee community continues to invest in better decaf, more people are discovering something important:
Decaf can be delicious coffee.
Maybe it’s time to retire the old jokes and make room for a new one:
Decaf is for coffee lovers.
