About This Coffee:
Colombian coffee is a victim of its own success. While its high quality, strong genetics and excellent processing has made the origin seem ubiquitous, this coffee is far from ordinary. When the roasting team evaluated this coffee, its characteristics and high quality has jumped right off the table. This is a coffee that if it were from a more exotic origin would probably command a price double of its current price. Huila is one of our favorite growing regions in the entire world, and we parse through the regions offerings every year when crop samples become available. This year, like many others, Huila's beautiful coffee is turning heads at specialty coffee roasters throughout the world. We believe the Castillo de Fuego is one of its brightest stars.
*Our preferred brewing method for this coffee is Chemex with a 1:15 coffee to water ratio
